Winner, Winner, Slow-cooked Dinner!

On days like today, the only thing that moves at slow speed in my house is the crock pot. I'm always looking for new slow cooker recipes to try, because I find myself relying on it more and more out of necessity! Tonight's dinner was a home run, and I thought I'd share this yummy, rich, creamy, comfort food in case you still have a chill in the air where you live. This was so good we scraped the bottom of the pot. I wish I would have taken a picture, but it was gone too fast!

Comforting Chicken and Wild Rice Soup for the Crock Pot

1 box Uncle Ben's wild rice and seasoning packet
2 cups cubed chicken (I boiled and deboned three chicken breasts and that was a perfect amount)
2 cans mushrooms, drained
2 cups milk (the recipe called for cream, but I used milk and found it plenty rich. I also added a bit of extra milk at the end to thin it down slightly.)
4-5 chicken bouillon cubes
3 T butter
2 cans cream of mushroom soup
4 1/2 cups water

Simmer on high in crock pot for four hours.

Yummmmmmm
