Look what's in my casserole dish tonight! Ha!
One of my kids ordered the junior bacon cheeseburger, and I felt compelled to share it with you. They do indeed mean JUNIOR when referring to the bacon, don't they?
Tonight wasn't conducive to a family meal. There were too many people going in too many directions to roll out a casserole. But, in keeping with my "Casserole Craze" theme this week, I shall not let you down. I simply can not allow the sun to set on this day without dispensing a suggestion for how to use a cream-of-something soup. Today Randi is hosting the Recipe Box Swap, and her theme is lunchtime favorites. Casserole for lunch?? Could it be? Why yes! Bravo for chicken pot pie casserole.
My kids aren't big sandwich eaters, so I'm always looking for quick and easy hot lunches. This goes together really quick, and is one of Hannah's favorite meals.
Chicken Pot Pie Casserole
1 large can chicken breast meat, drained (or 2 c. diced cooked chicken)
1 can cream of potato soup
1 can cream of chicken soup
1 can Veg-all
1 c. frozen peas
1/2 c. milk or cream
1/2 t. thyme
1 rolled, refrigerated pie crust
Mix all ingredients and pour into casserole dish. Unroll pastry and set over filling, folding edges to fit pan. Cut three slits in top of crust. Bake at 375 for 40 minutes.
I like to buy Steamers brand mixed veggies and cook them in the microwave to add to this dish.

That's such a familiar site, Mickey D's at the last minute, way too funny. What a fun theme you're doing this week, cassarole, I'm definatly trying a few of those. Nothing beat an all-in-one meal.

I can't get over how much our babies look alike!!! I'm going to send you some pictures. They were both little stinkers from the beginning too... It's amazing how much they change our lives right from the very start isn't it? Your blog is great, it's fun to see the kids growing up :)
