Today was just a wild day. We went "ninety to nothing" as my Grandma used to say. The kids all had sleep overs last night. Emma and I slipped out very early this morning to grab a few things from the store and pick up supplies for Monday night's cub scout meeting. The boys had a soccer game, and they got creamed. Hayden blew it off. At least it's better than last week, he told me, when they got creamed by a team of girls. Now there's some positive thinking. They went right from 90 minutes on the blazing hot soccer fields to a birthday party, where they played outside some more and then went swimming. I thought they'd be dog tired when they finally got home, but they headed to the neighbor's house to swim some more. If I could somehow soak up just a fraction of their energy, I'd tackle this Manor like Superwoman. Instead, I just spent all my energy trying to keep up with their pace today, and getting a semi-handle on 214 loads of laundry.
Jeff spent the day taking down the bent, dusty, ancient, malfunctioning, powder blue aluminum mini-blinds from our kitchen windows. He replaced them with wood blinds, and the entire room looks dramatically different. My dated, dusty, sincerely floral, puff pink and powder blue wallpaper really misses those blinds, but I am delighted to see them gone. It felt fantastic to say good-bye to the blues. I'll post more later about our kitchen projects.
I can hardly wait for tomorrow to come, because I get to see an old friend who is in town. I'll post more about that too. It will be a fun and exciting few days around here!
For now, I have some more favorite casseroles to share. I always have rice in the pantry, and try to always have some browned hamburger or diced chicken in the freezer. When I cook chicken or beef, I do so in large quantities so I can freeze several portions. That always makes meal prep easier on busy nights. I don't ever seem to get tired of casseroles. I'm hoping you don't get tired of reading about them either. :) Casserole week is almost over, just a few more to share!
Chicken and Wild Rice
3 cups cooked chicken
1 pkg. Uncle Ben's Long Grain Wild Rice (Original recipe) - cooked
1 can cream of celery soup
1 jar chopped pimentos, drained
1 can french style green beans, drained
1 cup mayonnaise
1 can diced water chestnuts
Mix ingredients together in a 3 quart dish. Bake at 350 covered for 20 minutes, then uncovered for 10 minutes more. I usually mix all the ingredients together while the rice cooks. This is so rich and satisfying. It always hits the spot!
Oma's Hot Dish
1 lb. hamburger
1 cup minute rice
1 cup water
1 cup chopped celery
1/2 cup chopped onion
1 can cream of mushroom
1 can cream of chicken
3 T soy sauce
2 T worcestershire
Brown meat with celery and onion. Drain. Mix all together and bake for 90 minutes in greased casserole dish. This is my Mom's recipe and she has used it for years.
