Casserole Week...Day Two

The temperatures lately are amazing. The afternoons just beg to be enjoyed. I'm energized by the sunshine that is warm but not hot, and the breezes that are cool but not cold. I could hardly wait to get my work done today so I could go play at the park. :) We hit some trails, and took a few detours to see what was happening down at the creek. The boys rode their scooters. I pushed Happy around in the stroller as she waved excitedly to every dog that walked by.




Today was my Mom's last day at her full time job. She is now retired! We decided to celebrate in high style, with none other than a casserole. :)

So, here we have Day Two of my casserole week. I have made this for countless church suppers. This recipe doubles (triples, etc.) really well and can easily be made ahead. This comes from my friend, Marci. It puts a nice spin on plain ol' spaghetti.

Easy Cheesy Mostaccioli

16 ou mostaccioli pasta, cooked and drained (I used Rigatoni tonight because that is what I had)
1 1/2 lb. ground beef, cooked and drained
1 t. pepper
1 t. Italian seasoning (this makes it!)
28 ou. jar spaghetti sauce
1 can cheddar cheese soup
4 cups Mozzarella cheese (divided)

Mix sauce, soup, 2 cups cheese, and seasonings in large pot. Add meat and well drained pasta. Pour into greased 9x13 baker and sprinkle 2 cups cheese on top. Bake at 350 for 40 minutes.
